Inspired by the classic French "Gateau Invisisible" technique, this cake features paper-thin slices of premium pear layered with a minimal amount of batter. The result is a delicate, "invisible" structure that melts in your mouth, feeling almost as if you are tasting pure, refined fruit.

We have enhanced this creation with candied Japanese Yuzu peel, adding bright, citrusy notes that cut through the rich sweetness of the pear. Within the creamy, pudding-like texture, the Yuzu provides a refreshing layer of flavor and a subtle bite, perfectly balancing elegance with a vibrant aromatic finish.
